Made from our renowned Arriba Nacional Fino de Aroma Ecuadorian beans, this raw and organic cacao paste is prepared by grinding cacao nibs to yield a rich paste that is then carefully tempered to form pure, smooth texture and taste. Tempering is an exact process of maintaining precise temperatures during preparation to ensure the cacao butter in the paste correctly crystalizes as it cools, preventing chalky, crumbly or grayish cacao paste. The final tempered cocoa bits are perfect for creating a variety of raw chocolate treats. This form of cacao can be easily blended into chocolate candies, smoothies and desserts while still giving you all the healthy benefits of the powerful superfood known as the "Food of the Gods." The maximum temperature reached during the process is 103 F, and it fluctuates between 75-103 F.
