To produce this fine superfood we take raw organic yacon slices and dry them at low temperature (105 F). Then they are ground into a powder while maintaining low temperatures. The powder is mildy sweet. The powder comes from the yacon root, a relative of the sunflower. They have good health properties. Most roots and tubers store carbohydrates as starch - similar to glucose; yacon stores carbohydrate as fructooligosacaride - composed mainly of fructose. The human body has no enzyme to hydrolyze fructooligosacaride, so it passes through the digestive tract unmetabolized, providing few calories. Yacon also acts as a prebiotic. The undigested portion of yacon serves as food for "friendly" bacteria, such as Bifidobacteria and Lactobacillus species, in the colon. This is something different and exotic to experience the beauty of life.
