Chocolate Coconut Kale Chips (cashew based)

I made these with my husband in mind.  Not only does he love the flavor he loves the texture.  It is “full-bodied”, hearty, not frail or fragile and more like a cookie than a chip.   I know many of you who are new to kale chips may be scratching your head at the mere thought of kale and chocolate.  I will admit, I was too!  But it works!   They smell heavenly with the aroma of rich chocolate.  What a sneaky way to get greens in someone!  Seriously, you must give these a try.  And if you do, please share with us what you think.

Did you know that kale is now recognized as providing comprehensive support for the body’s detoxification system?  Who knew you could eat chocolate and detox at the same time?  Score!! (haha).

Look for kale with firm, deeply colored leaves and moist hardy stems. Kale should be stored in a cool environment since warm temperatures will cause it to wilt and will negatively affect its flavor. The leaves should look fresh, be un-wilted, and be free from signs of browning, yellowing, and small holes. Choose kale with smaller-sized leaves since these will be more tender and have a milder flavor than larger leaves.  Kale is available throughout the year, although it is at its peak, from the middle of winter through the beginning of sprin

To store, place kale in a plastic storage bag removing as much of the air from the bag as possible. Store in the refrigerator where it will keep for 5 days. The longer it is stored, the more bitter its flavor becomes.  Do not wash kale before storing because exposure to water encourages spoilage.

Ingredients:

  • 1 bunch of kale -  washed, stems removed
  • 1 cup raw cashews, soaked at least 2 hours (1 1/2 cup once soaked)
  • 1/2 cup sucanat (powdered in spice grinder)
  • 1/2 cup water
  • 1/4 cup raw cacao powder
  • 1/4 cacao butter, melted
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/2 cup coconut, shredded
  • 1/4 tsp sea salt

Preparation:

  1. Wash and de-stem your kale.  Make sure you get as much excess water off of the kale as possible.  If you don’t it will make your sauce “soupy”.  Set aside.
  2. Using either your blender or bullet, grind your sucanat sugar to a fine powder.
  3. In the blender combine all the ingredients except for the cacao butter, this will be added at the very end.  Blend until nice and smooth.
  4. While the blender is still moving, slowly drizzle in the cacao butter and combine well.
  5. In a large bowl pour your sauce over the kale and evenly coat.  Use your hands for this job.  It is easier and more fun!
  6. Place the kale on the non-stick Teflex sheets that come with your dehydrator.  Spread the pieces out.
  7. Dehydrate on 105 degrees for approx. 6-8 hrs or until dry.  I tend to pull mine out before it gets 100% dry because I like it a little chewy.
  8. Store in an airtight glass container and be prepared to nibble non-stop till the last crumb is gone!

I sprinkled some extra shredded coconut on top before sliding it into the dehydrator.

  I must have taken 50 pictures of these crazy things and no matter what angle, no matter what lighting or what bowl I used… they just looked… well, let’s just say they taste way better than they look!   haha

    These are delicious! I just pulled them out of the dehydrator and had to tear myself away from the container of chips! Yum!! A couple of minor changes I made ( I can never leave a recipe alone. :) I actually made these closer to the recipe than I usually do.) – I added a bit more cinnamon and vanilla and I used coconut sugar instead of sucanat. And I didn’t sprinkle coconut on top. I will definitely make these again. It feels good to have a raw sweet that is a bit lighter and includes greens, too!

    I’ve just begun this adventure in raw UNcooking of our foods, so I have a lot to learn. Whenever a recipe calls for cacao powder, would cocoa powder work? And our little health food store never heard of cacao butter. Any suggestions for a substitution? Would coconut oil work? Thanks for all the wonderful information on your site!

      Hi Carolyn,
      You just might need to order those items on line if you can’t find them locally. Most likely the coco powder isn’t raw, so that is up to you. Coconut oil won’t substitute well in this particular recipe because raw cacao butter stays more firm than oil. If you look through my store which is located on the left side of the menu, you will see the raw cacao products that I use and you can order them through there if you wish.
