Coconut Butter Candies (raw, vegan, nut-free, gluten-free)

Recipes just don’t get much simpler than this!   I used stevia as my choice of sweetener for this candy because I wanted the color to remain white.  If this isn’t an issue for you and you want to use other liquid sweeteners, go for it.  I would start by adding 1 teaspoon and see how you like it.  You can always add more.  Besides being so easy to make, coconut butter is good for you!  It is a delicious whole food, made of pure, dried coconut flesh. This little “melt in your mouth” treat contains 12% fiber and 9% protein and nourishing fats.

You can use this recipe in so many ways. You could add any flavoring extract to it.  Peppermint would be perfect for the holiday season!  You can use any candy/chocolate mold as well.  These days I love using silicone molds because they last a long time, they don’t require any oiling and you just gently press on the back side of the mold and the candies slide right out.   One last true beauty with this recipe is that the candies remain firm at room temperature.  That is a treat itself here in the raw world.

  1. Warm the coconut butter by placing it in a hot water bath.  To liquify, place jar in hot water for 2 minutes and stir. Note: the red or brown specks are characteristic of natural coconut products.
  2. Combine the coconut butter, stevia and warm water in a bowl and whip together with a fork.  If the mixture starts to clump, place the bowl in a warm water bath.
  3. Pour the mixture into your candy molds and place in the freezer for at least 10 minutes or until firm.

    These are so good! I made a batch for my sister’s birthday today along with a batch of raw chocolate (very pretty color combination) and was hard-pressed not to keep them all for myself! Good news, though, is that they’re so easy to make. The amount of Nunaturals liquid alcohol-free stevia is perfect, too…no aftertaste at all. Thank you for a yummy and very pretty recipe!

        Thank you. I know this doesn’t pertain to the cupcake brownies but I was wondering if you could try and make chocolate covered pretzels. I have been craving them and there arent any raw recipes online line for them. I know if you make them they will be awesome.
