Sweet Potato Noodles

~ raw, vegan, gluten-free, nut-free, alkaline ~ Kale may be the queen of the greens these days, but sweet potatoes are the royal root veggies if you ask me… well today that is…  I can’t speak for tomorrow; I most likely will be on some other veggie that has won its place in my heart. :) After some reading here and there, I have learned that these orange-fleshed potatoes are a great source of beta-carotene.  Inside the leathery jacket, you will find a good source of “vitamin A, vitamin C, manganese, calcium, potassium, iron, vitamin B6, and fiber.
