Smooth, light and fruity Raw Fruity Chia Porridge with fresh strawberry

~ raw, vegan, gluten-free, nut-free ~

I love finding recipes that I can add to the weekly menu, and this is one of them.  It is creamy, smooth, light, fruity and very filling.   If you are new to using chia seeds, they are amazing.  Not so much in taste, in fact, they don’t have any taste.  But they benefit the body by delivering maximum nutrients with minimum calories, promotes digestion, and energy.

One of the amazing characteristics that make chia so unique is the fact they absorb up to 10 times its own weight in water. This helps to prolong hydration within the body and also slows digestion which keeps you feeling fuller longer.  Enjoy.

Ingredients:

Preparation:

  1. Soak the chia seeds in 1/2 -1 cup of water for at least 30 minutes prior to adding to the rest of the ingredients. You could even soak overnight, so you are ready for the morning.
    • If you use 1/2 cup of water, the porridge will be very thick.   If you want it thinner, you can always blend in more water later.
  2. Once the seeds are done soaking, place them in the blender along with the apple, banana, strawberries, and cinnamon. Blend until creamy… this is a good time to add more water if you want to thin it out some.
  3. Enjoy right away or store in the fridge for up to 3 days.

Tried this this morning and it was so good! And easy, too. My stomach had been feeling kind of upset, so I wanted something that was easy to digest and might help me feel better. Chia porridge seemed to do the trick! Thanks!

My oh my oh my!!! Just made this for the second time and had to get on here immediately and thank you! I have missed my porridge and dreamt of finding an alternative to oats and here it is! I made a double batch for me and hubby and topped it with a big swirl of maple syrup and it was DIVINE. No other word for it. Thanks Aimee Sue for yet another wonderful addition to my diet :)

How many does this recipe serve? I’m supposing one or two…I have a wonderful opportunity to prepare raw living foods to a film cast and crew and need to know how many times to double this. Thank you.

How many cups of water should I soak the chia seeds in for 2 people? I’m very new to raw foods.

    Thanks!

Hello Coco… welcome to my site. I am here to help when and were I can so never hesitate to ask questions. :)

It will depend on how thick or soupy you want the porridge to end up. But I would recommend 1/2 – 1 cup of water. Chia seeds will absorb all the water and make a gel. Have you worked with chia before? Keep in touch! amie sue
