Chocolate Apricot Boats

This recipe came to me in a whirl-wind, mass, explosion in the kitchen.  Bob and I are getting ready to head to Alaska for the summer and it’s time for me to use up all the ingredients in the pantry!  I actually enjoy these days as the creative juices get flowing.  Bob usually laughs and shakes his head as he watches me.  Bless his heart because he often jumps in and keeps the dishes washed for me just to assure that I don’t get buried alive in them.

I decided to dress these Chocolate Apricot Boats up a little bit with chocolate, how can one go wrong with chocolate! :)

Ingredients:

  • 2 cups dried apricots
  • 2 cups raw almonds, soak and dehydrate
  • 1 Tbsp raw agave nectar
  • 2 tsp lemon juice

Preparation:

  1. Place almonds in the food processor and chop up the almonds to a slight powder, leaving small bits.
  2. Put the almond mixture in a bowl so you can make the apricot paste.
  3. Place the apricots in the food processor and process into a paste.
  4. Add the ground almonds, lemon juice, and agave. Blend
  5. Shape and eat!
