Chocolate Apricot Boats (raw, vegan, GF)

This recipe came to me in a whirl-wind, mass, explosion in the kitchen.  Bob and I are getting ready to head to Alaska for the summer and it’s time for me to use up all the ingredients in the pantry!

I actually enjoy these days as the creative juices get flowing.  Bob usually laughs and shakes his head as he watches me.  Bless his heart because he often jumps in and keeps the dishes washed for me just to assure that I don’t get buried alive in them.

I decided to dress these Chocolate Apricot Boats up a little bit with chocolate, how can one go wrong with chocolate! :)


  • 2 cups raw almonds, soak and dehydrated
  • 2 cups dried apricots, re-hydrate
  • 1 Tbsp raw agave nectar
  • 2 tsp lemon juice


  1. Place almonds in the food processor, fitted with the “S” blade and process to a small crumble.  Place in a small bowl and set aside.
  2. Re-hydrate the apricots by placing them in bowl with enough water to cover them.  Allow them to sit for 15 minutes.
    • Once done re-hydrating, drain and discard the soak water.  Hand-squeeze the excess water from them.
    • Place the apricots in the food processor and process into a paste.
  3. Add the ground almonds, lemon juice, and agave. Process till the batter sticks together when pinched.
  4. Shape into desired shapes and sizes.
