Orange Pecan Pie Cookies (raw, vegan, GF)

This last week I was in a crazy create mode and I ended up with this new creation, these Orange Pecan Pie Cookies.  I served them at our going party and got tons of compliments on them.  The warmth of the orange, mixed in with the pecans and dates were a sure fire hit.  You could also add a little nutmeg and make these a Fall delight!


  • 2 cups raw pecans, soaked & dehydrated
  • 2 cups Mejool dates, pitted
  • 2 tsp ground cinnamon
  • 1-2 tsp orange extract


  1. Combine pecans, cinnamon, and orange extract in the food processor and pulse into small chunks.
  2. Add the dates and process until well mixed.
  3. Scoop the dough out and form 1” balls, flatten into cookie shape and place on the mesh sheet of the dehydrator tray.
  4. Dehydrate at 105 degrees until they reach your desired texture.
  5. They will keep for a week in the fridge or for several weeks in the freezer, thaw before eating.
