Paradise Balls

Paradise Balls were created when I had dehydrated some fresh cherries and pineapples! It reminds me of the tropics. Bob was popping these like little Bon Bons. The picture doesn’t do them justice. They had a bit of a pink/purple hue to them from the cherries.
Ingredients:
- 2 cups dried shredded coconut, unsweetened
- 1/2 cup raw cashews
- 3 Tbsp raw agave nectar
- 1/4 cup raw cold pressed coconut oil
- 1/2 cup dried cherries
- 1/2 cup dried pineapple
- 1 cup raw macadamia nuts
Preparation:
- Process cashews in food processor fitted with the “S” blade until it is a fine meal. Be gentle so you don’t over process the nuts or they will release too much oil. IF this should happen, no worries, continue processing until you have a “butter”.
- Add coconut, cherries, pineapple, coconut oil, and agave until well mixed.
- Add macadamia nuts last. Pulse to just break them in small pieces. You don’t want to create a paste.
- Blend till macs are nice and small. Be careful to not over process. If you do this will release too much oil from the nut.
- Shape into small scoops
- Chill until firm.
