Peppermint Haystacks (raw, vegan, GF)

These little morsels take me back in time.  I remember gathering together with friends to play cards.  We often ended up raiding the kitchen for whatever was available.  We use to make No-Bake cookies, which were loaded with unhealthy sugars and fats.  We would sit around the table playing cards, passing the bowl of batter around as we ate spoonfuls of it.  The fun, the laughter and ooh the belly aches!

I served these Peppermint Haystacks at our going away pot luck last night and boy were they a hit,  before I knew it they were gone!

This batter would also be wonderful served with ice cream!


  • 3 cups dried, unsweetened coconut flakes
  • 1 1/2 cups raw cacao powder
  • 1 cup maple syrup *not raw*- could use agave
  • 1/3 cup raw cold pressed coconut oil
  • 1/2 – 1 tsp peppermint extract
  • 1/2 tsp sea salt


  1. In a large bowl, combine all the ingredients and stir well to combine.
  2. Using a small ice cream scoop, your hands, or a big tablespoon, spoon rounds of the dough onto dehydrator mesh screen.
  3. Dehydrate for 1 hour at 145 degrees, then deduce the temp to 105 degrees for about 6 hours or until crisp on the outside and chewy on the inside.
