Creamy Garlic Dill Sauce

The creamy texture and rich taste of blended cashews makes for a delightful, dairy-free, sauce that can be thinned to make a salad dressing.  I love two-for-one recipes!

When creating a cashew based non-dairy recipes, the key is in the soaked and blending process of the cashews.  There are several reasons that I believe in soaking nuts for, but in sauce making, the soaking will soften them.  This enhances your chance to create a creamy mouth-feel.  I see so many people skip this process and I also see them under blending.  Sauces are not meant to be grainy feeling.

The garlic is rather strong so when you make your sauce add one clove at a time and taste test as you go.  Personally, I love garlic.  Just make sure your partner has some too and all will be good in the breath department. hehe   When I first made this recipe I did a single batch, my husband and I ate all of it and then made more, more and more… just sharing this to say… you might want to double the recipe from the get-go. :)  Enjoy! Ingredients:

Serves 1

Preparation:

  1. Place the cashews in a glass bowl, along with 4 cups of water.
    • Soak for at least 2 hours. Read more about why (here).
    • The soaking process will help reduce phytic acid, which will aid in digestion.
    • The soaking also softens the cashews so they blend nice and creamy.
    • After the cashews are through soaking, drain and rinse.
  2. In the blender combine cashews, lemon, olive oil, water, garlic, and salt. Blend until a creamy sauce is created.
  3. Hand mix in the dill.
  4. Taste to see if more salt is needed.
  5. The sauce can be warmed in a dehydrator if wished.
  6. This sauce is great served on top zucchini pasta or as a veggie dip.

    One of my faves… not only with Zucchini Pasta, Sliced Tomatoe, Fresh Cilantro, Avocado on top… but also just made a twist on a simple quasi Indian Salad…. Cucumber, Zebra Tomatoe, fresh Lime & pepper… with the creamy garlic dill sauce on top. (picture can be found on my website FB link attached to my name)

    I usually just make the sauce & only use a heaping spoon per serving & fridge the rest for a few other dips or sauce servings in the week.

    And, I only use One large clove of garlic… teehee.

    I am diabetic and got a book on going raw, but in this book it says to NOT use cashews… what can I use in place of cashews in these recipes? I think it is only until I get my numbers down to normal… will see… but want to do mostly raw afterwards as well….

    Dinner is looking (and tasting),…. Yummy!!!!! Good thing I made 6 batches of it for our crew. Yes , I made sure to taste test each batch (to make sure it measured up to the last batch…:] I’m feeling kinda full …LOL !!! It’s great even made with sunflower seeds (have to make it this way due to Gene’s allergies),rather then cashews. It’s perfect!!!! Thanks Amie Sue…. :] Lyn

      Hope that helps Carol on post above, most all of the recipes I have tried so far of Amie Sue’s that call for cashews , I am able to switch out with sunflower seeds (soaked of course). :] Lyn

    The best raw cream sauce we’ve had. We’ve tried many recipes before and was becoming very hesitant of trying these types of “cream” recipes, but my husband and I loved this sauce. He gave it 5 stars. Next time I’ll have to quadruple this recipe :)
