Decorative Glazed Dried Fruit

Tonight’s play time in the kitchen was inspired by an over abundance of lemons! Bless our lemon tree for it is yielding amazing fruits this year. But, it was getting to the point to where I couldn’t keep up with them. I juiced 1/2 a gallons worth to use for everyday food prep and to make lemonade with. I even froze some of the juice, hoping to savor it later down the road. And yet with all of that, I still had some lemons left on my counter that needed some TLC…not to mention there are so many more on the tree out back. So, I decided to “candy” some to use as decoration in up and coming recipes.
- 1/2 cup of agave
- 2 Tbsp lemon juice
- Thinly slice your fruit. Make sure the fruit isn’t too ripe and that you make even slices so they all dehydrate at the same time. I used my mandolin to make consistent slices.
- Mix the agave and lemon juice together.
- Dip each fruit slice in the mixture, allowing the excess to drip off.
- Place the fruit on the Teflex sheet that comes with your dehydrator.
- Dehydrate at 105 degrees for 12 or more hours, or until they are dry enough to remove and place on the mesh sheet that comes with your dehydrator.
- Continue drying until crispy, approx. 24 hrs. This will depend on your dehydrator and the thickness of your cuts.
- Oranges require thicker cuts due to the water content.
- Limes require a thinner cut due to the skin.
