For the love of everything Mexican… I have finally found a way to satisfy my “Mexican-Tooth.”  Yep, some people have a “Sweet-Tooth, ” but I have a “Mexican-Tooth”!   I grew up eating Taco Bell.  Back then, it was a real treat.  I ordered the same thing for the first 20 years of my life… bean burritos, hold the onions and light on the red sauce.  Then a cup of refried beans on the side.

In my adult years, y palette grew a bit more sophisticated as I was exposed to authentic Mexican food.  But to be honest,  I love it all.   This recipe doesn’t have raw-refried beans in it, (that is for another day of creating) but in all reality this Raw Taco Bite,  made my taste-buds do a happy dance.  There was a festa party going on in my mouth!

I have decided to break the component recipes into individual recipe links.  That way you can use the components to make your own creations.   Keep an on eye on this recipe, because I will add other components to the ingredient list as I create them, such as; guacamoles, salsas, wraps (taco shells), “re-fried” beans and who knows what else. :)

If you haven’t tried making the Nacho Chili “Cheese” Corn Chips… I highly recommend that you do.  They add a wonderful depth to this dish!  These taco bites are wonderful for party horsy-dervs, or for those late night snack-attacks, or you can even make a meal out of them.  I hope you enjoy this tasty Mexican treat.

    Amie-Sue, wow!! What a beautiful feast you have given us for Cinco de Mayo! Myself and 2 others just went all raw 49 days ago and we were getting tired of the same stuff everyday. Then pop! Here comes the wonderful discovery of YOU! Your site is gorgeous and your recipes have all 3 of us so excited and now we know we can do this wonderful way of eating long term because of the gifts you have given so freely! Thank you Amie-Sue!     Amie-Sue, Bless you! Even though I have been a vegetarian for about 25 years, I ate ALOT of breads, sweets and starches. Also, ALOT of processed foods. Four years ago I got cancer (and even though I knew from working in Health Food Store as teenager) that raw food could heal me, I bowed to family pressure (alot of nurses and Doctors in family)
    . As a result, I am cancer free but the damage of chemo/rad has been so bad I am still off work 4 yrs later. Lately, I have been dipping my toe into raw food and feeling OVERWHELMED. I have bought books, but still feeling unsure and not confident. LOVE your recipes and just the way you explain everything. I feel I can attempt some recipes. YOU are AWESOME! TY! Maggie

      Good evening Mags…. oh my goodness, I am not even sure where to start. First of all I am sorry that you have had to deal with cancer and now / still the after effect of chemo. For the past 4 months or so I have been doing some personal chefing for a friend of ours who was diagnosed with stage pancreatic cancer. His diet changed to an alkaline diet. So all the foods I made were alkaline, mainly raw but I did do some cooked soups. He is seeing some amazing changes. I am so thankful that you found my site and that you are finding some inspiration. If you have any questions, never hesitate to ask…. I will always do my best to answer them. :) Congratz on your healing recovery and many blessing in your new journey in life. amie sue

    OMG amie-sue… I made the Chili Cheeze corn chips, the Chili Lime Sauce and the taco meat. Then I sat down and ate, and ate and ate. I am so full. It was so good. I made my corn chips a little small, but next time I will know. All I can say is YUM! Thanks, I’m starting to get the hang of things.
