Chocolate Banana Pudding

Is it possible to have too many chocolate pudding recipes?  I don’t think so.  I love the fact that there are so many wonderful and healthy versions that we can make based on what ingredients a person might have on hand.

I wanted to increase the nutritional status of this pudding, so I added a protein powder to it.  This is optional, and you can use your favorite brand.

Store-bought pudding is made up of;  Milk Skim, Water, Sugar, Cottonseed Oil Partially Hydrogenated, Cocoa Processed With Alkali, Contains less than 0.50.5% of Flavor(s) Natural & Artificial, Salt, Sodium Stearoyl Lactylate, Vitamin A Palmitate, Vitamin D.

I think I like my “instant” pudding better.  You decide. :)

Ingredients:

yields 3 1/2 cups

Preparation:

  1. In the blender combine the coconut milk, bananas, chia seeds, maple syrup, cacao, salt, and protein powder.  Blend until creamy.
  2. Pour into serving bowls/cups/or jars and place in the fridge to chill.  Wait about 30 minutes for it to set up.

    Hi Amie,

    Thank you for this perfect nutritious pudding recipe!
    I have tried various pudding recipes but always have trouble with the ratios for correct flavor after it sets, because the sweetness dissipates a little when things cool down in the fridge.

    Amie I was wondering if you used the Chia seeds whole and the blender breaks them down?
    Or did you use ground Chia seed?

      Hello Maxine, I hope this recipe fits your taste buds :) I know what you mean though about finding the right balance in flavors so one doesn’t over power the other. Regarding the chia, I used ground and I fixed that in my recipe to reflect that. Thank you for asking so I could clarify that. A person could use either but to get that really smooth mouth feel, ground is the way to go.

    Just made this for breakfast this morning. I made my own coconut milk by blending 3/4 cup shredded coconut with 1.5 cups water in a high speed blender until smooth and then strained for a smooth milk.
    I LOVE this pudding and will be making this often from now on. What a nice breakfast treat :-)

    I tried this pudding but think the avocado chocolate raw puddings are more creamier and denser…and delicious. Didn’t notice that you had any avocado pudding concoctions key lime chocolate are good avocado companions and raw.

    Ok I think I will swim with you in this stuff yum yum yum…I am loving this so much I made a double recipe because i had two dark banana’s …and then poured them into little 4 OZ. cups on cup number one and am working real hard not to eat all of it so I can share with my husband after work…Thanks and I think this recipe may just make the most delicious frozen fudge bars one could ask for…it is 25 below zero today in Wisconsin and i’m thinking summer fun…sure did lift my spirits I love you for creating healthy foods that make me love you hee hee have a great day dear…I so look forward to your morning emails
