This Pumpkin Pie In A Bowl (soup) almost tastes like you are drinking pumpkin pie!  This soup is raw, vegan and gluten-free. was AWESOME! I highly recommend that you try it!  It almost tastes like you are drinking pumpkin pie.  Which is so odd because there isn’t any pumpkin in the recipe.  Mmmmmm it was so good!  It is loaded with tons of live enzymes and is in an incredibly digestible form.  It may not be the most attractive picture… I poured the soup in a jar so I could store it in an air tight container for dinner.  In the bowl next to the soup is all the left over pulp from making the carrot juice.   I made some dehydrated breads with the pulp that turned out wonderful.

Recipe from “Raw Food Life Force Energy” by Natalia Rose
Serves 2-3

Ingredients:

  • 32 oz of fresh carrot juice.
  • 1 cup of raw sweet potato, peeled and cubed
  • 4 Mejool dates, pitted
  • 1/2 ripe avocado (I used 1 whole one)
  • 1/2 tsp pumpkin spice

Preparation:

  1. Place all of the ingredients in a high-speed blender and blend until smooth.
  2. Enjoy right away or store in an air-tight container and eat within 36 hrs.
