Berry Lavender Chia Chew (raw, GF, vegan)

The Berry Lavender Chia Chews came out fantastic! That is what I hollered from my roof top this afternoon. hehe There are times when I am developing recipes, scratching my head to see what flavor profile I can come with, and then I just start using whatever ingredients I have on hand…. measuring, scooping, dashing, sprinkling and mixing. I taste the batter and think to myself, “Hmm, that seems pretty good.” I throw it in the dehydrator, dry it, allow it to cool and start cutting up into little squares making sure to nibble here and there. A chef must do what a chef must do. There are times that I think to myself, “Hmm, pretty darn good” and there are times when I go, “OMG!”… This is one of those OMG moments. They came out amazing.
I used a bag of frozen, organic, antioxidant berry blend. It had raspberries, blueberries, blackberries and pomegranate seeds. Not only did the color come through so vibrant during the drying process, the flavors blended so well to complement one another. The added teaspoon of ground lavender buds creates as a nice lingering note after you swallow it, which is perfect. Lavender can really over power a recipe so it is best to start with a small amount and work yourself up.

- Easily digestible. The shells are easily broken down, even when swallowed whole. This is an improvement over flax-seed, which have to be ground up to be digested properly.

I wanted to share this photo with you because the green cutting board really shows you just how vibrant these little chews turned out. Aren’t they gorgeous?!
Ingredients: yields 3 1/2 cups
- 5 cups organic mixed berries
- 1/2 cup chia seeds, whole
- 1 tsp ground lavender buds
- In the blender or food processor, fitted with the “S” blade, combine all of the ingredients together. Blend until well combined.
- Set aside for 10 minutes. This will allow the chia to thicken the puree.
- Pour the mix onto the teflex sheet that comes with the dehydrator. Spread 1/4″ thick. There should be enough batter to make 1 tray worth.
- Dehydrate at 145 degrees (F) for 1 hour, then reduce temp to 105 degrees (F) for about 16 (+/-) hours.
- Store in an air-tight container.
