Banana Nut Brittle

This recipe is sooo delicious!  If you love banana bread and all things crunchy… you will love this brittle recipe.  You can really use any nut that you wanted to or had on hand. Sometimes I make it with chocolate chips or raisins. In the photos provided, I have shown a batch with and without the chocolate chips. Both were amazing.

This recipe goes together quickly, in fact, the hardest part was staying out of the dehydrator, sneaking bits and pieces. Oh, and don’t get me started on the aroma, oooooh the aroma was delightful. (too late) No need for an air diffuser pumping out stress-reducing essential oils.

Just put the dehydrator in a central location in the house, plug it in, and be prepared to be enveloped in your grandmother’s arms… a place of warm snuggles and happy memories. Well, that’s where it transported me. That “place” may be different for you. :)

Don’t let them fool you…

It appeared at first as though these crackers would never firm up and be crunchy.  I even kept it in the dehydrator a bit longer, and I was shaking my head thinking that there is no way it would ever dry out enough to be crispy.

However, when I finally pulled it out and allowed it to cool on the kitchen counter, that is when things changed, and it went from chewy to crispy!  This stuff is addictive!

I bagged some up for my mother to take on the airplane with her and I froze the rest. Update… mom said that she couldn’t stop eating them once she opened the bag on the plane.  She ended up sharing them with the woman sitting beside her.  That opened up a conversation all about NouveauRaw and healthy eating.

yields 60 pieces (depending on size)

Preparation:

  1. In the food processor blend bananas, dates, flax meal, and salt until smooth.
    • The banana weight is without the skins.
  2. Stir in nuts and coconut.
  3. Evenly spread 1/4″ thick on a dehydrator tray lined with non-stick sheets.  Score into the size and shape you want.
  4. Dehydrate at 145 degrees (F) for 1 hour, then reduce to 115 degrees (F)  for 12 hours, then flip them over and continue dehydrating for another 12 hours.
  5. Allow them to fully cool before storing in a sealed container in the refrigerator or freezer for up to 4 months.

Here it is, ready for the dehydrator. Spread it evenly and score to the desired size.

          My daughter is obsessed with these bars. I don’t think I’ve ever see her enjoy anything as much (probably because of all the dates and bananas – she’s never had sugar before).

    When you say spread out 2 cups on teflex sheets, are you referring to the 9″ or the smaller size? It would give a better idea of the thickness of the spread. They smell awesome as they’re dehydrating,can’t wait to try them! Also, I’m not sure if you have read anything from Dr. Gabriel Cousins on dehydrating, but he suggest dehydrating at 145 for the first three hours as it discourages any moulding and is still considered to be raw.       Good evening Angela….aren’t we both busy at this hour. hehe I have the 9 tray Excalibur so the trays are 16×16 I think. They aren’t real thick. But you can decide how thin or thick you want them to be too. I just developed another recipe that is semi similar today… kind of like a cracker. I will get that posted tomorrow I think.

      I wrote a post a long time ago regarding dehydrating at the higher temp…. https://nouveauraw.com/raw-techniques/dehydrating-at-145-degrees-explained/. I didn’t learn it from Dr. Cousins but through Excalibur. I use that technique for recipes that high in moisture, but only for 1-2 hours.

    Hi Amie Sue, I have these in the dehydrator now.. I was just wondering one thing. With the weight measurement of the bananas, ist it 999gms of peeled, or is that the weight before peeling? Probably a silly question, but I needed 11 bananas to get the peeled weight to 999gm…only after I made them, I wondered if I’d interpreted it correctly. Thanks xo

      Hello Coral.

      The weight of bananas is for the banana flesh only. (without the skins) I added the weight because bananas come in all different shapes and sizes. How did they turn out? blessings, amie sue

    These are just amazing!!! I made them several times already (and just open a recipe to make again) and absolutely everybody I gave them to try loved them! and it was already more than 30 people….
