Almonds | Skins Removed

naked-almonds-featureEver seen a naked almond? I had to laugh because Bob and I have been watching the TV series, Naked & Afraid. A survival show where two people attempt to spend 21 days in harsh (putting it mildly) conditions… naked. They are allowed one survival tool.

Anyway, as I was popping the skins off of the almonds and occasionally one would shoot off into the distance. Bob asked just what the heck I was doing as one skid alongside him… I told him, “Sorry, my almonds are naked and afraid!” hehe, I hope you can follow my twisted sense of humor.

They are beautiful and creamy in color.  It isn’t always necessary to undress your almonds, but there are times that it is called for.  If you want to make a nut cheese that is blond in color or if you’re going to make a cookie that is blond in color, these are some possibilities.

This process is rather easy to do and somewhat therapeutic. Also, the skins have been known to cause digestion discomfort.  So, if you find almonds hard to digest, take them one step further by removing the skins and see if it makes a difference.

Ingredients:

Preparation:

  1. Soak the almonds in a bowl for approximately 8 hours.  Drain, rinse, and add fresh water every 4 hours.
  2. After they are done soaking, drain, and rinse thoroughly.
  3. Make sure that you remove the skins right after they are done soaking and keep them in the water while you are removing them.  If the almond starts to dry, the skin will stick to the nut and won’t come off.  If need be, you can add hot water to the bowl.
  4. Now comes the therapeutic part.  Grab ahold of the almond on one end and pinch it, the almond will pop out of the skin.

      Hi Alex,
      Personally, I don’t think that the enzymes die that fast in this case, I could be wrong, I don’t have a way of “testin” it…. but by the time I pour the water over the almonds the boil has already simmered down and it is in for just a quick and short time that I feel they will be ok. If this is a concern you can pop the skins off after their soaking process, they are pretty lose at that point, usually. I do the hot water bath to ease up on them and make it a bit easier. When I was attending raw culinary school, we would give the almond the hot water flash for the ease of popping them off.

        I have a question .
        I want to remove the skin of raw almonds 、but it takes a time to remove , I know to put the almonds soaked for 8 hours ,and then put the nuts in the boiled water. but I worried about the enzymes die . How degree and how long boiling in the water is the good for remove the skin not die the enzyme of the almonds . I just worried about the enzyme die , but I want to remove the skin more easier .
        Please advice me .

          Good evening Sunny,

          I don’t suggest to add the almond to boiling water. Under preparation it reads, “Make sure that you remove the skins right after they are done soaking and keep them in the water while you are removing them. If the almond starts to dry, the skin will stick to the nut and won’t come off. If need be you can add hot water to the bowl.”

          Removing the skins is a process for sure. turn on some good music or use the time to meditate. :) Blessings, amie sue

    I use a silicone jar opener for a better grip and am able to remove the skins more quickly. No more sore fingers.

    Note – When using unpastuerized almonds, the skins don’t pop off, no matter how long you soak them. Removing them is very tedious. If you have a trick for removing skkins from unpastuerized almonds, I’d LOVE to hear it. I only use unpastuerized and never removed the skins because it’s just too difficult. You can always tell if your almonds ar ereally raw. IF after soaking them, the skins slip off and the nut pops out..the nuts are pastuerized. If the skins stubbornly stay attached to the nut…they are unpastuerized. I know that white almond flour is soooo appealing for some recipes..I just can’t find a good way to get the skins off. Thanks again for all you do.

    see: no need to activate or soak the seeds for their anti-nutrients or that are better for digestion ?, and the last, almond milk if consumed daily (as my daughter three years) check and Stripped after soaked to ensure that the phytic acid and other toxins go, you what do you think? thanks Brenda

      Hello Brenda,

      I am not 100% sure on what you are totally asking me. But let’s see if I understand. The purpose for soaking the almonds is to reduce the phytic acid and enzyme inhibitors… I ALWAYS recommend this. Regarding the almond skins… some people find the skins irritating on their digestive systems so removing them can be helpful. If you making almond milk for you little one, you can try it both ways and see if she has any complaints. I would also recommend serving her a variety of non-dairy milks so she doesn’t form an intolerance to any of the nuts or seeds. Does that help? Blessings, amie sue

        if i do not have a dehydrator or an oven… cN i put them in a dish covered with cheesecloth in florida weather hot! will that work after soaking?

          Honestly, I’ve never tried it. I know people sun-dry fruits, etc. so it might work if the weather is really hot and you keep them covered with the cheesecloth. My suggestion would be to try a small amount and see how it goes. let me know, knowledge is valuable! blessings, amie sue

      I tend to shop around when I need to put in an order but for the most part, I get through Azurestandard.com. You can do a search on their site as to what nut you are looking for, read carefully to get the raw ones. blessings, amie sue
