naked-almonds-featureEver seen a naked almond? I had to laugh because Bob and I have been watching the TV series, Naked & Afraid. A survival show were two people attempt to spend 21 days in harsh (putting it mildly) conditions… naked. They are allowed one survival tool.

Anyway, as I was popping the skins off of the almonds and occasionally one would shoot off into the distance. Bob asked just what the heck I was doing as one skid along side him… I told him, “Sorry, my almonds are naked and afraid!” hehe I hope you can follow my twisted sense of humor.

They are beautiful and creamy in color.  It isn’t always necessary to undress your almonds but there are times that it is called for.  If you want to make a nut cheese that is blond in color or if you want to make a cookie that is blond in color, these are some possibilities.

This process is rather easy to do and rather therapeutic.  Also, the skins have been known to cause digestion discomfort.  So, if you find almonds hard to digest, take them one step further by removing the skins and see if it makes a difference.


  • Raw Almonds


  1. Soak the almonds in a bowl for approximately 8 hours.  Drain, rinse and add fresh water every 4 hours.
  2. After they are done soaking, drain and rinse well.
  3. Make sure that you remove the skins right after they are done soaking and keep them in the water while you are removing them.  If the almond starts to dry, the skin will stick to the nut and won’t come off.  If need be you can add hot water to the bowl.
  4. Now comes the therapeutic part.  Grab a hold of the almond on one end and pinch it, the almond will pop out of the skin.

      Hi Alex,
      Personally, I don’t think that the enzymes die that fast in this case, I could be wrong, I don’t have a way of “testin” it…. but by the time I pour the water over the almonds the boil has already simmered down and it is in for just a quick and short time that I feel they will be ok. If this is a concern you can pop the skins off after their soaking process, they are pretty lose at that point, usually. I do the hot water bath to ease up on them and make it a bit easier. When I was attending raw culinary school, we would give the almond the hot water flash for the ease of popping them off.

    I use a silicone jar opener for a better grip and am able to remove the skins more quickly. No more sore fingers.

    Note – When using unpastuerized almonds, the skins don’t pop off, no matter how long you soak them. Removing them is very tedious. If you have a trick for removing skkins from unpastuerized almonds, I’d LOVE to hear it. I only use unpastuerized and never removed the skins because it’s just too difficult. You can always tell if your almonds ar ereally raw. IF after soaking them, the skins slip off and the nut pops out..the nuts are pastuerized. If the skins stubbornly stay attached to the nut…they are unpastuerized. I know that white almond flour is soooo appealing for some recipes..I just can’t find a good way to get the skins off. Thanks again for all you do.
