The Value of Tasting as You Go!

Taste testing as you are creating your recipe is VERY important, if “taste testing” where an actual ingredient it would be pegged as the most important of all time.  The reason behind this is due to the fact that you will be using fresh foods and fresh foods are not artificially altered by food manufactures.  The flavor of your fruits and veggies can vary from carrot to carrot from apple to apple.  It all depends on the quality of your produce, when it was harvested, and if it is at its peak of ripeness.

For example, let’s look at the banana.  I grew up eating solid yellow bananas.  If it had a spot on it I wouldn’t touch it.  It was ingrained in me that a solid yellow banana was the prime pic of the bunch.  When in fact a truly ripe banana is loaded with brown spots (don’t confuse them with bruises though).

If you want to do a taste test to really understand the importance of taste testing your ingredients,  use the banana.  Peel both a solid yellow banana and one that has brown spots all over it.  You will notice that the one with the brown spots is much sweeter.  But not only does the ripeness make a difference in flavor, it also aids in how your body digests it.  At one point in my life I stopped eating bananas for a period because when I ate them I would get bloated and very uncomfortable feeling.  I thought that my body didn’t react well to them.  Then one day, many years later,  I learned how to really select a ripe banana and after I put knowledge into practice I found that a ripe banana doesn’t bloat me or upset my system.

Google is your friend.  Do some research to educate yourself on how to select ripe produce and how to properly store it.  There are also great apps for your cell phones these days that will bring you much ease as you are browsing your local produce department or farmer’s market.

So to quickly recap… It is important that you taste your ingredients as you use it in recipes.  You may need to add more or less according to the flavor level of your food.  This includes dried fruits and nuts. Using natural ingredients can and often do create different results!  Pay close attention to the consistency, color, smell, texture and flavor of your ingredients that you are working with as you go along.

    Hi Amie-Sue, thank you for sharing your incredible recipes! I always taste while I prepare meals, but how do you taste cracker batter? The flavors intensify in dehydration, and I especially have a hard time judging the amount of salt. Can you share your thoughts on this? Thanks!

      Good afternoon Ella,

      The beauty of raw is every batter can be tested prior to “cooking” in the dehydrator. It is true that flavors often intensify so you just have to learn to gauge it honestly. Often times with crackers, I go on the lighter side of adding salt IN the batter… but I then sprinkle coarse salt on top of the cracker prior to dehydrating. That seems to give me better control. I wish that I had a magic approach that worked for every recipe across the board…but with experience, you will learn how to better monitor the level of spices you like. I hope this helps.
