Napa Garden Veggie Confetti Party Mix

We love granolas, we love trail mixes… but to be honest, most are on the sweet side and very few are on the savory side.  So, the other day, I created a savory mix.  I have been pleasantly surprised all the fun ways that we have been using this mix.  Not only has it served as a snicker-snack for my never ending, grazing husband… but I use it to sprinkle on salads and to top my Black Sesame Cheesy Chipotle Nori Crisps.

To season my party mix I used a premixed seasoning made by Homemade Dressings.  I put a link for it below in the ingredient list.  I love all of their seasoning mixes.  They are 100% natural, no added sugars, and they are gluten-free.  This particular mix is made of tomato, basil and garlic.  So, if you don’t have that particular seasoning you can use your own and spice it up to your taste.

Ingredients: yields 5 cups

  • 2 cups fresh, organic corn kernels
  • 2 cups peas
  • 2 cups sliced carrots
  • 1 cup sunflower seeds, soaked
  • 1 cup pistachios, soaked
  • 1 1/2 – 2 Tbsp Napa Garden seasoning
  • 1 cup raisins

Preparation:

  1. Soak, drain and rinse the sunflower seeds and pistachios.  Add to a large bowl.
  2. Add corn kernels, peas, sliced carrots, and seasoning.  Toss together until everything is well coated.  Note – I sliced my carrots on my mandolin set to 1.5 mm slices.
  3. Spread the mix on the mesh sheets that come with the dehydrator and dry at 115 (F) degrees for 8 -/+ hours or until dry.
  4. Once the mix has cooled to room temp, place in a bowl and add raisins.  Toss together.
  5. Store in an airtight container on the counter for 2-4 weeks.  Maybe longer.

    Amie Sue, thank you for continuing to be so incredibly creative!! I don’t know how you do it, but boy aren’t we fortunate to have you! Quick question re: peas and corn.. Do you use fresh? If they are not available, would you suggest frozen?

      Good morning Joanne,

      You can use fresh or frozen. Fresh is always the best… but either one. Also, be sure to aim for organic if you can. If you use frozen, thaw it first and dab with a paper towel if any water residue to lingering do to ice crystals that may have formed during freezing. Have a wonderful weekend!! amie sue

    It is planning time and I am exciting “shopping” your wonderful store of endless creations for healthy doable recipes for friends and family.

    I am never disappointed with the results of your recipes and most of all I always learn something more to continue to grow. That is most important for me.

    With regard to the Trail Mix, should it yield a crunchy, chewy, or firm texture. What am I after here? Also, may I substitute the raisins with a non fruit ingredient. What would you suggest? Last question what other seasoning mix might work, in addition to the one given?

    With a family of young students who need grazing food often to fuel long study session, this recipe is a blessing.

    You seem to never tire of the constant un-cooking questions and needs of your readers. Thank you for being patient, encouraged and always willing to help.

      Always a pleasure to hear from you. :) This trail mix was a combination of chewy and crunchy. As far as seasoning goes, you really could use any flavor profile that you and family enjoy. Italian seasoning, cumin, onion and garlic powder or even something with a kick to it like a pinch of cayenne could be fun. As you see the flavor options could be quite endless.
