Grains, beans, and legumes are amazing sources of protein, fiber, carbohydrates, and micronutrients. They taste amazing individually, yet combined they can create a flavor profile of both sweet and savory dishes due to their mild flavors. Beans and grains can be used for hot or cold entrées, side dishes, or salads. They’re convenient to use and store, low in cost, readily available, and nutrient-dense. And, combined, they’re a great source of high-quality protein, comparable to animal proteins. I am starting this section with foundational cooking techniques to ensure that every dish is successful.
