Spicy Fiesta Corn Dip

Light, refreshing, slightly sweet almost describes this dish, but in the end, it is more like a fiesta party in your mouth.

Corn often gets a bad rap because most of it is GMO (genetically modified organism). There are many health questions about these techniques and how it affects food.  But if you do your homework you can find NON-GMO corn.

For this recipe, I wasn’t able to find organic corn on the cob at the time, so I used organic frozen corn.  I use the brand, Woodstock which is GMO-free. As always, I encourage you to use the best ingredients that are available to you. :)

Learning to eat a healthy clean diet is a step by step process.  Some people can jump right into it with both feet, but others require putting one steady foot in front of the other.  I support you, wherever you might be in your journey.  Using corn as an example, since this is our main ingredient… moving from canned corn to fresh is one step.  Then choosing organic over conventional is another step.  It is all a process. And the more you practice these steps, the more it will become a habit in your shopping.  Next time you head to the grocery store, keep these following tips in mind.”


Yields 3 cups


  1. In a medium mixing bowl, combine the corn, onion, red pepper, green onion, jalapeño, and garlic.   Stir together until everything is evenly dispersed.
  2. In a small bowl whip together the mayonnaise, sriracha, lemon juice, chives, salt, pepper, and agave.  Pour over the corn mix and stir together.
  3. Add the cilantro and toss together.  Top with a bit of extra cilantro and a dash of cayenne.

    Hi Amie-Sue,
    Hope you are having a fabulous new year so far! Judging by all the lovely recipes you share each day, I am sure you and your husband are enjoying January…
    I have made vegan mayo before, but would love to try this recipe with the corn and your version of the mayo…
    Also, I finally bought my agar-agar powder and will try one of your hard cheeses that do not need fermentation. :)

      We are having a wonderful new year… I think it just trickled on from last year. :) I hope all is well on your end. I hope that you try these recipe Esl and you know that I would love to hear what you think. Over Christmas we had a full house for 3 weeks. I swear that I have never seen so much food being consumed in my house on a daily basis. haha During one the fridge raids, someone mumbled that they couldn’t find the cheese in the fridge. No cheese in our house but I can make some! So, I got to show my family how to make the vegan cheese with agar. It was a lot of fun and so great that it could be enjoyed within minutes after it chilled.

    Hi Amie Sue –

    I made this today, raw vegan mayonnaise and all! I must say, it is fantastic! I had to force myself to stop eating it long enough to come write this thank you for such a great recipe….two recipes actually, if you include the mayo. This corn dip has the perfect amount of heat and a wonderful texture! I used a little less than 1/2 cup of mayo and ate it as a salad rather than dip.

    I just winged it and put about a 1/2 cup of cilantro, but was wondering how much you used?

    I’m going to have to make another batch so that my husband can try it. Yep, that means I’m going to eat the entire 1st batch myself. Oink!

      Good morning Maureen,

      It is so good to hear from you. Thank you for sharing this. I sort of winged it myself on the cilantro. I find this herb to be a very personal thing for each person. Adding to much can make a recipe taste soapy, well to me anyway. So as long as you find a happy medium with it, that is all that matters. Always adding a lessor amount and building up while taste testing is the way to go. :)

    Hello, hello :)

    1) You are talking about non-GMO corn… we don’t have organic corn where I live — odd enough — but there is corn with the less chemicals as possible (farmers said) but it is those corns with F-1, etc… seeds. To your knowledge, are those can be acceptable to eat or should I try to grow some next summer if I can find seeds that are heirloom and natural….

    2) Your vegan cheese with agar… what is the name of the recipe?

      Hello Amyah,

      I am no fully aware of F-1 corn. So I did some reading to brush myself up on it. It’s a cross between two different plants which creates something new and exciting. I read a pretty good article on this site about it. http://daughterofthesoil.blogspot.com/2006/07/f1-hybrids-what-every-gardener-should.html. For me, I always aim to eat all of my foods in the form that are closest to its true natural. I know depending on where a person lives, finances, etc it can be hard to find or choose top quality ingredients. My only bit of advice is to always do the best you can with what you have. If it doesn’t sit right within you, don’t eat it for sure. If you can grown your own with heirloom seeds, that would be awesome, no doubt about that.

      What cheese are you referring to? I have many. Under the recipe category there is a section called “Nut cheese”…. click there and you will see all that I have shared so far. I hope this helps, amie sue

    I think I will try to get some heirloom seeds and build a cage around the little corn field against the gizillion of deer, elk, bears who think my place is the best in the world :(

    As for the cheese, it is the one you were talking about… when you had many visitors and somebody complained you had no cheese in the fridge nd you made this one…

    Anyway, I have almost all of your cheese recipes and they are gorgeous :)

      Critters can take a tole on veggies for sure. We have a hard time keeping the deer out of our cherry orchards. They love them as much as I do. hehe The cheese that I was referring to was the Horseradish flavored one on my site. Have a happy day, amie sue

    amie sue , I made this yesterday, i used frozen organic corn because i can not find any fresh organic corn, i made also the cashew mayo, it all came together wonderful and i loved it, thanks so much. I am learning to eat more raw and had to stock my pantry with some organic products and alternative sugar, thanks for your good information. pier marie
