Eggless Salad Veggie Plate

This post turned out to be a very filling and satisfying meal. I find that I add avocado to a lot of our meals but with good reason. Not only are they beautiful, but they are also satiating, and packed full of nutrients.

Avocados provide soluble and insoluble fiber, both of which your body needs to keep the digestive system running smoothly. Plus, the soluble fiber slows the breakdown of carbohydrates in your body, helping you feel full for longer. So for those reasons, and the fact that they taste so good, I make sure that avocados part of our healthy diet.

But the star of this show is the Eggless Egg Salad, with agar “eggs”.  Have you tried that recipe yet? If not, I highly encourage you to step out of the typical egg carton and give it a try.

I know that it can seem unappealing to prepare “mock” foods… feeling as though your expectations will be let down and you will toss yet another plate of food in the compost. If you like real eggs, then I am confident that you will enjoy this dish.

Over the years, I have fooled, umm, no… I have ENLIGHTENED many people into loving this eggless recipe.  I will teach you how to make the texture of egg whites, and mimic the egg-rich flavor of egg yokes through the use of Kala Namak, (black salt).  You will be amazed.

This meal left us feeling full but not bogged down. It was refreshing and brought home those good ole’ comfort food cravings from my childhood. I hope this plate of food has inspired your next meal. Enjoy and many blessings, amie sue
