In every situation that I go through in life, I try my darnedest to find the silver lining. What I am about to share is not to diminish or make light of the current world events (COVID-19). People are falling sick and losing their lives. This pandemic is happening at such a rapid pace that most days, I can’t quite wrap my head around it. So, my desire to seek the “silver lining” is to find comfort in the midst of turmoil.
As our world faces extraordinary challenges, Bob and I want to express our deepest support to our whole Nouveauraw community (and those surrounding it) who are also facing and joining the fight against the global spread of COVID-19.
These times are difficult, and we are entering uncharted territory, but together we can continue to exchange, encourage, and care for each other. I am committed to exploring different ways to uphold our core values, bringing recipes and techniques to you, so we never stop learning and growing.
Like most of you, my trips to the grocery store are VERY limited; therefore, my stock of fresh raw produce is also VERY limited. Never again will I take perishable fruits and veggies for granted. I think I have been guilty of that in the past.
It’s been an interesting exercise to find balance in managing our food supply. With produce being perishable, I have to figure out how to keep my produce fresh, using it before it turns, and yet somehow getting it to stretch until the next grocery run (which are now weeks apart). Bob is at high risk–I mean we all are, in reality, but our doctor told Bob to stay home at any cost due to his age and some health stuff he has been overcoming. I’ll be darned if I am going to do anything to put him/us at any higher risk…so I stay home as well.
So for me, during this time, as a recipe developer, I have an opportunity to explore preparing more shelf-stable foods. I am not just referring to dehydrating or freezing raw foods. This is my (our) reality and necessity right now. My goal is always to make every bite count, so I am using techniques that ramp up the nutritional value of each bite. With that being said, I decided to share some of the vegan cooked recipes that I make, just in case you are in the same predicament.
Many of you have gardens or resources to obtain fresh produce as needed, allowing you to eat a raw diet more freely. For those who do, please be patient and supportive of the work I am putting into the site. I am not veering away from my core values or my passion for providing delicious and nutritious plant-based recipes.

Again (I can’t express it enough), please know that my heart is to continue providing you with healthy, whole food, vegan recipes. I genuinely care for each of you and feel so blessed having each of you as an extension of our family. For those of you who also partake of cooked foods, I hope the trust and confidence that I have built with you with my raw recipes (for over a decade) will filter over to the cooked recipes. Even if you have a full understanding of how to cook the foods that I will be talking about, please read through the posts. We all have an opportunity to learn something new… I sure have!

I’ve been waiting so long for those recipes to be added to your blog! There were a few posts checking on how people would react but I’m so glad you’ve eventually decided to do what you feel is best, all other opinions aside. You shouldn’t be aplogising. It is YOUR blog. Plus, different people are following your journey and not all of them are vegan, not all of them can eat raw, sometimes your body just says no. Your blog and your posts on admitting that fact helped me a lot through my journey, so I am more than happy and curious to see those other recipes. Best of luck and good health to you both!

In my experience, Amie Sue, everything that you do here appears to be inspired by love, or joy, or some combination of them. Thus everything you present to us, every piece of information, every recipe, all of the food creations–regardless of form, raw or cooked–translates into nourishment not only for our bodies, but our minds and spirits and the collective of spirit we experience as community.
I warmly encourage you to share the entire spectrum of your experience and talents with us because I view the mind and body as gloriously interwoven with each other. From my point of view, with love and joy as the foundational ingredients of your art, perhaps there is literally no wrong way, and indeed who knows yet just how many right ways, to feed minds and hearts as well as bodies simultaneously?!

But today, I have to confess, our dinner consisted of one of your tasty raw creation; we had “Refried bean and beef burritos” with the “spicy cheese dip”. My John asked for seconds. You just bring us all together with your warmth, talent and kind thoughts; they resonate in my mind while I prepare that “Amie Sue delightful plate”. Do you have a cheese press that you recommend?

I can’t say that I do. When I make vegan cheese that requires pressing, I wrap it in cheesecloth, place it in a flat bottomed mesh strainer (so it can drain), put a small plate on top, followed by some weights (I use clear marbles that sit in a container) to put even and steady pressure on it. Looks like all of our challenges are quite a bit the same! Trying to make the raw veggies last for a couple of weeks etc. That’s where my cabbage and broccoli and cauliflower comes in more as I near the end of my 2-3 weeks between shopping!! I must admit, COVID has taught me to grateful for each and every lettuce leaf… I am not exaggerating. haha My appreciation for fresh produce has elevated, not that I didn’t appreciate it before, I think I just took it a little bit for granted. Cruciferous veggies are wonderful for longer storage, you are right about that. I am happy to hear that you are growing sprouts. They are packed full of nutrition. I face timed with my dad last night and he taught me some tricks on growing veggies hydroponically. We’ll see if I can get that going. There is SO much I want to do. Good morning! Thank you Dorothy for the support. It brings me great encouragement. You know my heart is to always bring healthy recipes to your dinner plate. That will always be the foundation of my work. :) The recipes I am sharing are made from ingredients that I have enjoyed over the years, I just never thought to share the recipes until COVID showed up. It was then that I had to get more creative and since I love to plate beautiful foods for Bob, it seemed that the timing was right to share them with you all.
