The creamy texture and rich taste of blended cashews makes for a delightful, dairy-free, sauce that can be thinned to make a salad dressing. I love two-for-one recipes!
When creating a cashew based non-dairy recipes, the key is in the soaked and blending process of the cashews. There are several reasons that I believe in soaking nuts for, but in sauce making, the soaking will soften them. This enhances your chance to create a creamy mouth-feel. I see so many people skip this process and I also see them under blending. Sauces are not meant to be grainy feeling.
The garlic is rather strong so when you make your sauce add one clove at a time and taste test as you go. Personally, I love garlic. Just make sure your partner has some too and all will be good in the breath department. hehe When I first made this recipe I did a single batch, my husband and I ate all of it and then made more, more and moreā¦ just sharing this to sayā¦ you might want to double the recipe from the get-go. :) Enjoy! One of my favesā¦ not only with Zucchini Pasta, Sliced Tomatoe, Fresh Cilantro, Avocado on topā¦ but also just made a twist on a simple quasi Indian Saladā¦. Cucumber, Zebra Tomatoe, fresh Lime & pepperā¦ with the creamy garlic dill sauce on top. (picture can be found on my website FB link attached to my name)
I usually just make the sauce & only use a heaping spoon per serving & fridge the rest for a few other dips or sauce servings in the week.
And, I only use One large clove of garlicā¦ teehee.

I am diabetic and got a book on going raw, but in this book it says to NOT use cashewsā¦ what can I use in place of cashews in these recipes? I think it is only until I get my numbers down to normalā¦ will seeā¦ but want to do mostly raw afterwards as wellā¦.

This is absolute the best sauce ! I canāt eat enough of this. I even made a cucumber, beet, with hemp seed and mixed it up with sauce. Fantastic !

Dinner is looking (and tasting),ā¦. Yummy!!!!! Good thing I made 6 batches of it for our crew. Yes , I made sure to taste test each batch (to make sure it measured up to the last batchā¦:] Iām feeling kinda full ā¦LOL !!! Itās great even made with sunflower seeds (have to make it this way due to Geneās allergies),rather then cashews. Itās perfect!!!! Thanks Amie Sueā¦. :] Lyn

The best raw cream sauce weāve had. Weāve tried many recipes before and was becoming very hesitant of trying these types of ācreamā recipes, but my husband and I loved this sauce. He gave it 5 stars. Next time Iāll have to quadruple this recipe :)
