Cranberry Macadamia Nut Cookies

Cranberry Macadamia Nut Cookies are yummmmmy!  As I was creating this batter I couldn’t keep Bob out of it!  It first started with a tiny taste test, which turned into spoonful after spoonful. :)  I took half of the cookies and put a dollop of raw vanilla frosting on top, which was wonderful.  I know many of the cookies I make look so small but raw treats are so rich in flavor that it doesn’t take much to satisfy you.

Ingredients:

  • 2 cups raw macadamia nuts
  • 1 cup cranberries, dried
  • 2 Tbsp raw agave nectar
  • 1/4 tsp ground cinnamon
  • 1/2 tsp vanilla extract
  • Dash of salt


Preparation:

  1. Add all ingredients in food processor using the “S” blade.
  2. Bring mixture to a medium crumble.
  3. Remove 1/2 of the batter, placing it in a medium sized bowl.
  4. Continue processing the remaining batter to a very small crumble/meal. Be careful  to not over process the macadamia nuts.  (they will become very oily if you do)
  5. Add the two batters together and mix well.
  6. Create 1” balls, rolling the batter in the palm of your hands, then lightly flatten to make a cookie shape.  You can leave them in small balls if you wish.
  7. These don’t require dehydration.  Store in an airtight container in the fridge.

    In ten minutes I had made these into little balls, coated some in cacao powder and they were amazing!
